  • 350 grams Plain flour
  • 2 tsp Ground ginger
  • 1 tsp Cinnamon
  • 5 tbsp Golden Syrup

Instructions

Making the dough

  • Mix together the flour, ground cinnamon, ground ginger and bicarbonate of soda. Ensure that they are well mixed together. (Ends up looking like the flour that you started with originally).
  • Use the room temperature better and now add that into the mixing bowl. Mix in until the mixture looks something like breadcrumbs
  • Add the sugar into the mixing bowl and mix it into the breadcrumb like mixture
  • Add the golden syrup to a small mixing bowl and break the egg into the bowl. Then whisk the two together before during into the main mixing bowl
  • Mix it all together until it forms a mixture that will hold together in your hands
  • Wrap in clingfilm and put it in the fridge for 10 minutes

Rolling and Cutting the biscuits

  • On a flat surface, lay down some greaseproof paper. Now place some of the dough on top. Use your hands to flatten down the dough so that it is about 2 cm thick. Now place another piece of greaseproof paper on top. Use the rolling pin on top of the paper to roll the mixture to about 0.5cm thick. The reason we do it this way is that it saves a lot of mess with the flour and stops excess flour getting into the biscuits.
  • Now cut your biscuits to size. You can reuse the offcuts and roll again to make more biscuits.

Cooking

  • Preheat oven to 160C (fan)/ 180C
  • Place on grease proof paper on a baking tray and put in the for 12 to 15 minutes. Remove from oven when golden and place on cooling rack to cool completely.
  • Now decorate!
